Beef Koobideh < Kabab Koobideh>

지난번 올렸던 본레스 치킨과 같은 Persian 음식이네요. 닭고기가 싫은 신 분들은 소고기로 한번 만들어보세요. 이것도 정말 맛 있어요. 새로운 양념을 사기가 귀찮을수도 있지만
한번 마련해 놓으면 두고 두고 쓸수 있으니 괜찮을거예요.

Ingredient: 3 lb. of ground beef ( 85% lean), 2 small onion, 1 TBSP salt, 1 TBSP black pepper,
                   1 tsp turmeric, 1 tbs ground sumac, 1/4 tbs saffron

= Soak SAFFRON for 10 min.
= Grate ONIONS & drain excessive juice
=Combine grated ONION with GROUND BEEF
=Add SALT & PEPPER, TURMERIC, ground SUMAC
=Add 2-3 tsp of soaked SAFFRON to the bowl
=Knead for 7 minutes
=Cover the bowl with plastic wrap, keep the beef mixture in refrigerator  to marinate for 8-12hrs
=Fro the best result use koobideh skewers to grill the kabobs (Koobideh skewers are long & flat
    and wider than normal skewers)
= Place a fistful of beef mixture on a skewer 7 flatten
=Grill the kabobs on the grill
=Turn the kabobs often to avoid burning
= Grill few tomatoes & peppers to serve with it, kabobs can be served with rice
